Balsamic Vinegar Glazed Meatloaf
Meatloaf is that dish that everyone says, “my mom makes the best meatloaf!” It is that quintessential comfort food. Far be it for me to assume this version is better, but if you are looking to switch it up a bit, this might be a great way to go!

- 1.5 lbs ground meat
- 1-2 c minced celery
- 3 cloves minced fresh garlic
- 1/2 c minced onion
- 1/2 c minced red pepper
- 2 eggs
- 1 c breadcrumbs (I use homemade)
- 1/2 t red curry
- 1 t sage
- 1/2 t cayenne pepper
- 1/2 t marjoram
- 1 t salt
- 1 t pepper
- 1.5 c catsup
- 1/3 c and 2 T balsamic vinegar
- 6 slices of bacon cut in fourths (omit if using ground pork)
In a large bowl mix together meat with veggies.
Add eggs and breadcrumbs, stir well
Add seasonings, stir well
Add 1/2 c catsup and 2T Vinegar.
Spread into a casserole dish rather than a loaf pan so the meat is not as thick.
Top with bacon pieces.
Mix together 1 c catsup and 1/3 c vinegar
Spread on bacon
Bake at 375 degrees for about one hour and fifteen minutes.
Let rest 10-15 minutes before serving so it comes out in nice slices.
