Brie and Blackberry Crostini with Cinnamon Sugared Pecans

These appetizers are a crowd pleaser! They work great when serving a few different appetizers, giving your guests a sweet and filling bite. Serve at a brunch or an evening party, or for your family as a special treat alongside a salad!

Ingredients

  • 1-2 French bread baguettes (sliced diagonally, about ¼” thick)
  • 2 jars of very good seedless blackberry jam
  • 2 c dried craisins
  • 1 6" wheel of good brie
  • Vegetable/canola oil to grill bread
  • 3 c whole or pieces of pecans
  • 2 egg whites
  • 1 T cinnamon
  • 4 t allspice
  • ¼ t nutmeg
  • 1 t salt
  • ½ c sugar

Instructions

Pecans

  • Preheat oven to 250 degrees.
  • Whisk egg whites until frothy.
  • Add 1 T of water.
  • Add cinnamon, nutmeg, salt and sugar.
  • Put pecan in a bowl.
  • Drizzle on egg white mixture until pecans are coated but not drenched.
  • Spread in one layer on a parchment-lined casserole dish.
  • Cook in the oven, stirring a few times for about an hour.
  • Remove and cool on the counter out of the pan.

Crostinis

  • Paint each side of bread lightly with oil.
  • Grill in a skillet until each piece until golden brown, then cool completely.
  • Spread each piece with jam.
  • Slice brie, creating enough pieces for the amount of bread you have.
  • Top bread/jam with a piece of brie.
  • Press sugared pecans and craisins into brie.
  • Put arugula on platter
  • Arrange appetizers on top of arugula on the platter.
  • Serve and ENJOY!
