Cut lasagna into cubes, about 1.5” x 1.5”.
Roll each cube in flour then dip in egg then roll in breadcrumbs.
Set on a plate or parchment paper.
Heat up oil on medium-high heat in a small pot to 350 degrees, or right before it smokes. You may need to turn it down to medium heat if it gets too hot or starts to smoke.
Evaluate how many can fit in one layer on the bottom without touching, no more than 3 or 4.
Fry each bite for about 2-3 minutes until all sides are browned.
*NOTE - breadcrumbs burn quickly. Do not leave them for a second. Flip them around with a pair of tongs when any edge starts to brown. If they're browning too fast, turn down the heat.
Place finished lasagna bites on a paper towel to absorb any oil.
Serve immediately with a bowl of marinara if desired.
