Cauliflower Tater Tots
Carb free tater tots?? What!? These are super delicious! Especially when you have cut out carbs and want a lower carb version.

- 1 head cauliflower (shredded in a food processor using a grating blade or a hand grate)
- 2 eggs
- 1/2 t paprika
- 1/4 t cayenne
- 1 jalapeño (minced (optional))
- 1 t olive oil
- 1 c Colby jack cheese
- 1 t salt
- 1 t pepper
Pre-heat oven to 400 degrees.
Put grated cauliflower in a kitchen towel. Salt the cauliflower and let sit for 10 minutes.
Squeeze out all the liquid you possibly can so they brown.
Mix all ingredients to combine.
Smash mixture into greased muffin tins. About 1/4” or so thick.
Cook until nicely browned.
