Equipment

  • Food processor or hand grate
  • Muffin tins

Ingredients

  • 1 head cauliflower (shredded in a food processor using a grating blade or a hand grate)
  • 2 eggs
  • 1/2 t paprika
  • 1/4 t cayenne
  • 1 jalapeño (minced (optional))
  • 1 t olive oil
  • 1 c Colby jack cheese
  • 1 t salt
  • 1 t pepper

Instructions

  • Pre-heat oven to 400 degrees.
  • Put grated cauliflower in a kitchen towel. Salt the cauliflower and let sit for 10 minutes.
  • Squeeze out all the liquid you possibly can so they brown.
  • Mix all ingredients to combine.
  • Smash mixture into greased muffin tins. About 1/4” or so thick.
  • Cook until nicely browned.
  • ENJOY!
