Lamb Burgers with Grilled Halloumi Cheese

I love a good Rack of Lamb, so I fashioned a recipe for lamb burgers that mimics the delicious flavors of the French way of cooking this 5-star restaurant entree!

Ingredients

  • 1.5 pounds ground lamb (making 4 6oz burgers. You want a fatty mix. No less than 20% fat.)
  • 4 brioche buns
  • 1 sliced sweet onion
  • ½ large jalapeno slices thinly
  • 2 T olive oil
  • 1/2 c Dijon mustard
  • 1 t ground rosemary
  • 1 t ground marjoram
  • 1/2 t salt and 1/2 t pepper
  • 1/8 t ground ginger
  • 2 fresh garlic cloves minced
  • 4 ¼ " thick halloumi cheese
  • 4 slices of tomato
  • 4 leaves lettuce (butter, romaine, green leaf, or spinach)
  • 1 avocado sliced thinly (optional)
  • 4 T mayonnaise (optional)

Instructions

Bun Spread

  • Sauté onions until soft and caramelized.
  • Turn on low.
  • Add garlic and jalapenos cook for one minute.
  • Remove from heat.

Sauce

  • In a bowl add mustard and spices to blend.

Buns

  • Grill buttered buns in a griddle.
  • Top the bottom bun with mustard mixture.
  • Top the top bun with mayo ( if desired ) and lettuce leaves.

Halloumi Cheese

  • Warm nonstick skillet on medium-high
  • Gently add slices of cheese and brown on each side
  • Remove and set aside
  • Assemble everything but the burger
  • Lettuce Onion mixture and tomato on the top bun

Lamb Burger

  • Cook burger on grill or griddle until internal temp at 125 degrees.
  • Let sit for 5 minutes. Place in a bun, top with a slice of cheese and serve immediately.
  • Burger should be soft to touch when removed from the grill.
  • Note higher fat content meat cooks faster because the liquified fat speeds up the cooking process.
