Mashed Cauliflower with Butternut Squash

Mashed cauliflower is a great potato alternative. This alternative is a bit different by adding the sweet flavor and luscious color of butternut squash. It’s wonderful for the holidays when you don't want to be so filled up on potatoes.

  • Food processor

Ingredients

  • 1 head cauliflower (cut into florets)
  • 1 medium to large butternut squash (peeled and cut into large chunks)
  • 4-6 oz butter (depending on taste)
  • 2 T light olive oil
  • ½ c parmesan cheese (shredded)
  • Salt and pepper to taste

Instructions

  • Steam or boil cauliflower until for tender - falls off the fork when poked.
  • Steam or boil squash at the same time, until fork tender- falls off the fork when poked.
  • Drain and place cauliflower first in food processor.
  • Add butter, oil, cheese and salt and pepper.
  • Process until incorporated.
  • Drain squash and place in processor immediately.
  • Process until smooth.
  • Taste and season more as needed.
