Mashed Cauliflower with Butternut Squash

Mashed cauliflower is a great potato alternative. This alternative is a bit different by adding the sweet flavor and luscious color of butternut squash. It’s wonderful for the holidays when you don't want to be so filled up on potatoes.

In order to give the mashed cauliflower flavor, you do have to butter it up a bit and add cream and seasonings. Which isn’t all bad! 

Substitutions

  • Mashed carrots

Note in regards to processing the vegetables.

  • You may need to do it in two batches depending on the size of the processor. If that is the case, add half cauliflower, half other ingredients as well. Place on a serving bowl and then combine when done
  • Also, peeling butternut squash can be difficult. Cook squash skin in the microwave for 4-5 minutes. It will peek much easier

Equipment

  • Food processor

Ingredients

  • 1 head cauliflower (cut into florets)
  • 1 medium to large butternut squash (peeled and cut into large chunks)
  • 4-6 oz butter (depending on taste)
  • 2 T light olive oil
  • ½ c parmesan cheese (shredded)
  • Salt and pepper to taste

Instructions

  • Steam or boil cauliflower until for tender – falls off the fork when poked.
  • Steam or boil squash at the same time, until fork tender- falls off the fork when poked.
  • Drain and place cauliflower first in food processor.
  • Add butter, oil, cheese and salt and pepper.
  • Process until incorporated.
  • Drain squash and place in processor immediately.
  • Process until smooth.
  • Taste and season more as needed.
  • ENJOY!
