Queso with Black Beans & Fresh Vegetables
There is Queso and then there is QUESO!!! This is my favorite queso recipe by far because it’s the best!
Here are some varieties of an appetizer delight!

- 1 lb white American cheese
- ½ c whole milk
- 1 T butter
- ⅔ c black beans (drained)
- ½ c red pepper (diced)
- ½ c green onions (sliced)
- 1 c spinach (chopped)
- ⅔ c tomato (diced (or rotel stewed tomatoes))
In a double boiler or non-stick pan on the lowest possible setting, melt ingredients, stirring continually to ensure the cheese is not turning brown on the bottom. If it does turn brown, it means it is burning- if it burns, you start over.
Note: Queso you buy has to be melted the same way, so you might as well save money and make it.
Add beans and vegetables, stir, and cook on low for about 10-15 minutes.
