There is Queso and then there is QUESO!!! This is my favorite queso recipe by far because it’s the best! Here are some varieties of an appetizer delight!

Here are some varieties of an appetizer delight!

Serve in a self heating crock pot or some such device on LOW. If it gets too runny, turn off occasionally since you want it to have some thickness to it. 

The end product should be mostly the vegetables and the protein if using one, and the cheese is really just what holds it together like mayo holds chicken salad together.

Here are some nice combos to get you started:

  • Vegetable: Green Onion, Spinach, Black Bean, Jalapeno, Red and Orange peppers
  • Chili con Queso: your favorite chili, extra jalapeno, green onion
  • Venison, Beef, Chicken, Pork: black beans, green onion, spinach, peppers: green, red and/or orange and jalapenos
  • If adding meat, season with chili powder, cayenne pepper, salt and pepper, cumin.

Ingredients

  • 1 lb white American cheese
  • ½ c whole milk
  • 1 T butter
  • c black beans (drained)
  • ½ c red pepper (diced)
  • ½ c green onions (sliced)
  • 1 c spinach (chopped)
  • c tomato (diced (or rotel stewed tomatoes))

Instructions

  • In a double boiler or non-stick pan on the lowest possible setting, melt ingredients, stirring continually to ensure the cheese is not turning brown on the bottom. If it does turn brown, it means it is burning- if it burns, you start over.
  • Note: Queso you buy has to be melted the same way, so you might as well save money and make it.
  • Add beans and vegetables, stir, and cook on low for about 10-15 minutes.
  • Serve and ENJOY!
